Beets- Ethiopian style
3 beets
3 medium potatoes
1 red onion
1 Anaheim pepper (seeds removed) or one can mild green chilis
1 TB oil
2 cups water
Sauté onion until soft
Add and sauté beets until softish (they’ll keep cooking later)
Reduce heat
Add 1 cup water and pepper/chilies
Cover and simmer (stir) 30 mins ish until tender
Add pots and 1 cup water
salt and pepper
Cook until pots are soft
